Dinner time!

On Wednesdays, I'm always lacking in blog material. Or maybe it's more time I'm lacking. Regardless, its noon and here I am cranking out a sort of decent post for you. I say sort of decent because it has no pictures but it has a fast and yummy dinner!

It's also probably not  the healthiest meal in the world but you could easily add in some healthier options. I started making this in college when I wanted a hot meal but didn't want to have a lot of work or pots and pans involved!

You will need:

1lb. of lean ground turkey
1 can black beans
1 can Rotel Mexican (or tomatos if you prefer)
1 package of Taco Bell taco seasoning
Black olives
Rice (I use 10 min bag rice)
Cheese
Sour cream
Tortillas

Directions

Brown meat in a very large skillet and start water boiling for the rice. 
Once browned, drain and add taco seasoning according to directions. Turn meat on low. Add beans, Rotel, and black olives. While the rice finishes, mix in cheese and sour cream with the meat. Add the rice. Stir and simmer on low for about 5 minutes. 

After everything has had a chance to heat up, make your burrito! I always add extra cheese because I'm a cheese freak but for normal people, it's all included in one little skillet! 

I love this recipe so much mainly because I can have dinner on the table in 20 minutes and only have one skillet to clean! It's also plenty for leftovers for lunch, even when Christian eats two huge burritos!
