My Favorite Christmas Treat: Sausage Balls

Okay, so yes, it's the afternoon and I'm just not putting up a post. I'd like to say it was because I had a crazy busy weekend, but it was actually pretty relaxed and lazy but I'm still blaming that. It was a much needed slow weekend with my man and I didn't spend time on the computer.

BUT, I did spend time making sausage balls last night and I'd like to share my recipe! I only make these at Christmas and I just love them so much. My mom used to always make them Christmas Eve and we'd eat on them all day and into Christmas Day. Now, I've taken that job on and I decided to make some for my team at work!



This is an easy recipe and I'm going to include some of my best tips for making them turn out perfectly every time!

First things first, gather your ingredients.

1 pound sausage 
2ish cups cheddar cheese
1 block of cream cheese 
2 cups Bisquick 
I suggest letting the cream cheese sit out just a bit so it's easier to work with but you don't want it completely at room temperature.

Alright, let's get started. There are two options here: using your hands or using a mixer. I do a combination of both.

First, combine the cream cheese and sausage (I use a hand mixer here!) and then slowly add in the Bisquick. I use the hand mixer to start with the Bisquick but I don't fully mix it all in until I add the cheese. Add in the 2ish cups of cheese ( I love cheese so I'm a little heavy handed with the cheese).
Once you've got the cheese going, I suggest using your hands so you can really get the cheese and the rest of the Bisquick added in.

Now that all the ingredients are mixed in VERY well, you'll want to put down a layer of tin foil on a baking sheet (or 3). It's not the prettiest presentation but you'll appreciate it when it's time to clean up.

Roll up balls about 1 inch thick and give them a little room to spread out as they cook! Cook for about 20 minutes until they are golden brown and a little springy to the touch. Let them cool for a couple minutes and then pull those babies off the tin foil, roll it up and throw it away! Told you that you'd appreciate that!

And that's it! Just try not to eat them all before your Christmas party!

So, to recap:
1. Preheat oven to 350 degrees and lay tin foil on your baking sheet(s).
2. Mix sausage, cream cheese, cheese and Bisquick all together.
3. Roll into small 1 inch balls.
4. Bake for 20-25 minutes.
5. Don't eat them all by yourself.
