Taco Soup!

I like to cook. I'm not the best at it and I keep it pretty simple with a few good recipes I've tried and we both love. Last night I ventured out and tried something I hadn't made before. I had to work mandatory overtime on my day off yesterday and to be there at 9am. Now, I understand that most people go to work around 7 or 8, but when I normally work at 1pm and I closed Sunday night, getting up and going right back to work at 9am was not a fun experience this morning.

Anywayyyys. I came after work did some blogging and Pinterest-ing and picked a new recipe for dinner! I made a few changes to the original recipe that I found here.

Her recipe calls for a packet of ranch, red beans, way more tomatoes than what I used and to be made in a soup pot. We're lacking a nice soup pot until after someone graciously gives us one for our wedding shower soooo I had to turn it into a crockpot meal. Even in the crock pot, it was a super quick recipe.

Here's how I did it:

1 lb ground turkey (I always prefer turkey to ground beef)
1 can of corn, drained
2 cans of diced tomatoes, undrained
1 can kidney beans, drained
1 can black beans, drained
1 packet taco seasoning

I browned the meat while my sweet assistant fiancé opened all the cans and drained everything for me. I dumped everything in the crock pot and set it on high for about 30 minutes and stirred it once or twice.

After it was ready, we put a nice helping of cheese and sour cream and chowed down.


It was a great alternative to the chili I was originally craving but too lazy to make but I would have made a couple changes to it:

First, I wish I had added rice to it. I almost did after we tasted it but someone was hungry and didn't want to wait for the rice to cook.

I also think one can on tomatoes (or even none, really) and substitute actual salsa for tomatoes. We both agreed it needed a slight kick to it!

So for all your guys up north freezing your tails off, this would be a great soup/chili to warm your little bellies until this storm fades. Also, can I come live with you because I'm over the South complaining about and thinking this

I love Taco Soup. This sounds great. Yes the second picture is very much the norm for us in New England! :)

Yum! We make a very similar taco soup :) I usually throw in some extra chili powder and/or cumin to kick up the heat and flavor some!

I make something similar to this but with chicken instead! I can sometimes get reaaally lazy and it's nice because you can put the chicken in the crockpot with everything else and then shred it when it's done! I also use a can of salsa instead of tomatoes like you mentioned :) so good!
